Well I have recently learned to play Iron Man and How you have to play 2 middle strings at the same time just bugs me... I either only hit 1 or i hit too many... Is there a good exercise to help me with this???

Play slow to begin with and then pick up speed as you practice.

Yes start slow! It's better slow and perfect than fast and sloppy! Also to help with your coordination, practice arpeggios (Playing a chord one string at a time) and string skipping exercises.

if your only using two fingers right now, try to start using three and then four... i know it sounds hard, cause it is, but it helped me with a lot of that stuff i can play a lot faster too

I had the same trouble when I had to play certain strings when playing fold music on an acoustic guitar. I was just starting out and it was not easy finding certain strings. What I did was I looked at my hands and said to myself, "Play the low E, now the B, now the G" and so on. Then with my eyes still opened, I would mix up the strings. Once I had a real "Feel" for where I was going, I did this excercise with my eyes closed. Let the guitar become an extension of your hands and you'll get it.
